This is an easy recipe that marries the wonderful fresh flavors of zucchini, tomatoes and Parmesan cheese.  Flavor intensifiers include minced garlic and Lemon Pepper seasoning.


Ingredients

  • 1 Teaspoon
    Garlic, minced
  • 1 Tablespoon
    Olive Oil
  • 4
    Zucchini, medium
  • 1 can 14.5 Ounce
    Italian diced tomatoes, undrained
  • 1 Teaspoon
    Lemon Pepper Seasoning
  • 1/2 Teaspoon
    Salt
  • 1/4 Cup
    Parmesan Cheese

Instructions

  1. In a large skillet, sauté garlic in oil.

  2. Add zucchini; cook and stir for 5 minutes or until crisp-tender.

  3. Stir in the tomatoes and seasonings. Simmer, uncovered, for 10 minutes or until liquid is absorbed and mixture is heated through.

  4. Sprinkle with Parmesan cheese and serve.
