Zucchini is such as versatile vegetable that it’s even an ingredient in cookies! If you like oatmeal cookies, you’ll probably like these cookies that also contain golden raisins and coconut.
Preheat oven to 375 degrees F.
Mix together the flour, oats, salt, baking soda, cinnamon, raisins and coconut.
Cream the butter and sugar until blended. Beat in the egg. Stir in the vanilla.
Stir in the dry ingredients and zucchini, mixing well.
Drop by rounded teaspoons about 2 inches apart onto oiled baking sheet (cookies do not spread).
Bake for 10-14 minutes, or until well-browned. Remove to wire racks to cool.
