A beautiful dish with the wonderful colors of the tomatoes, zucchini and yellow squash! 


Ingredients

  • 6 Ounces
    Zucchini, sliced
  • 6 Ounces
    Yellow Squash, sliced
  • 2
    Scallions, chopped (or Onion)
  • 1 1/2 Teaspoon
    Garlic, minced
  • 1 1/2 Teaspoon
    Oregano
  • 2 Ounces
    Feta Cheese, crumbled
  • 12 Ounces
    Tomatoes, sliced
  • 2 Teaspoons
    Olive Oil

Instructions

  1. Lay slices of zucchini, yellow squash and tomatoes, slightly overlapping them, in a greased baking dish.

  2. In a bowl, mix the scallions or onion, garlic, oregano and feta cheese. Sprinkle mixture over squash and tomatoes in baking dish.

  3. Drizzle with olive oil. Bake for 30 minutes at 400 degrees F. or until the vegetables are tender and the top is lightly browned. Serve warm.
