A basic recipe for Corn Pudding made from corn, eggs and half ‘n half primarily. More flavor may be added by adding chopped onions, chopped mild green chilies, and/or chopped pimentos to the mixture or by adding cooked crumbled bacon and/or grated cheese to top off the Corn Pudding after it’s baked. Cream or evaporated milk may be used in place of Half ‘n Half.
Butter a 2-quart casserole dish. Preheat oven to 375 degrees F.
Assemble all ingredients.
Add all ingredients to a large bowl and mix together until well-blended.
Pour corn pudding mixture into prepared casserole dish.
Bake Corn Pudding at 375 degrees F. for 45 minutes or until top is set and lightly browned.
