Southern Biscuit Muffins are like biscuits baked in a muffin tin! They’re so delicious with a thick outer crust and a cakelike center. Great for breakfast, brunch or with soup for supper!  This recipe is from Chef Paul Prudhomme.


Ingredients

  • 2 1/2 Cups
    All-Purpose Flour
  • 1/4 Cup
    Sugar
  • 1 1/2 Tablespoon
    Baking Powder
  • 1/4 Teaspoon
    Salt
  • 1 stick + 2 Tbsp.
    Butter, unsalted
  • 1 Cup
    Cold Milk

Instructions

  1. In a bowl, combine the flour, sugar, baking powder and salt; mix well, breaking up any lumps.

  2. Work the butter in by hand until the mixture resembles coarse cornmeal, making sure no lumps are left. (Alternately you can use a food processor for this step - just stop when the mixture resembles coarse cornmeal.)

  3. Gradually stir in the milk, mixing just until dry ingredients are moistened. Do Not Overbeat!

  4. Spoon the batter into 12 greased muffin cups.

  5. Bake at 350 degrees F. until golden brown, about 25-30 minutes.
