Chicken Almondzini is a unique retro “comfort food” that features chicken (or turkey)), spaghetti, Swiss cheese, broccoli, mushrooms, pimento and almonds in a creamy, cheesy sauce. The sauce is unusual because mayonnaise is used to make the sauce instead of butter. This recipe is from Kraft Foods and is a long-time favorite of mine!
A traditional chili without meat but with the addition of bulgur, which give the chili a ground-meat-like texture! This recipe is adapted from The New Moosewood Cookbook by Mollie Katzen.
NOTE: Dried beans (2 1/2 cups) may be used. Soak the beans overnight, then place the soaked beans in a Dutch oven or large soup pot and cover with water. Bring to a boil. Partially cover, turn heat down to a simmer and cook until tender, about 1 1/4 hours. Watch the water level during cooking, adding more if necessary. Drain off any excess water when the beans are done.
Use kidney beans or any combination of beans you prefer to make this wonderful meatless chili!
Two chocolate “cake-like” cookies sandwiched with a marshmallow fluff filling combine to make a luscious Chocolate Marshmallow Whoopie Pie! Store these yummy sandwich cookies in the refrigerator.
A wonderful whole wheat bread with a beautiful texture! This dense whole wheat bread is sweetened with honey. Great served warm with butter or toasted and served with peanut butter!
This recipe is for Old Fashioned Peanut Butter Cookies but updated by the use of coconut oil instead of shortening. Coconut oil works just as well as shortening in this recipe and I’d encourage you to try it!
I have fond memories of my maternal grandmother making this dessert each year at Christmas. Her Mallow Date Roll is so rich with dates, miniature marshmallows, nuts, pineapple and cream that one slice is very satisfying!
A wonderful jam with the flavor of tropical pineapple! Several women have won State Fair prizes with this recipe!
Prizewinning Pineapple Jam makes a great gift!
A comforting chicken and wild rice casserole with onion, pimento, green beans and water chestnuts.
NOTE: Sour cream or Greek yogurt may be substituted for the mayonnaise in this recipe. Nuts could be added to this recipe for even more crunchiness. Cheese may also be added, if you are a cheese lover!
Trailside Peanut Butter Oatmeal Cookies are oatmeal cookies to which peanut butter has been added along with the usual ingredients of flour, eggs, vanilla, sugar and butter. The fun begins with the additional ingredients that should equal 2 1/2 cups – peanut butter chips, butterscotch chips, chocolate chips, nuts, raisins, coconut or whatever favorite ingredients you would like to add!
