Chicken Almondzini is a unique retro “comfort food” that features chicken (or turkey)), spaghetti, Swiss cheese, broccoli, mushrooms, pimento and almonds in a creamy, cheesy sauce. The sauce is unusual because mayonnaise is used to make the sauce instead of butter. This recipe is from Kraft Foods and is a long-time favorite of mine!

Mollie’s Vegetarian Chili

A traditional chili without meat but with the addition of bulgur, which give the chili a ground-meat-like texture! This recipe is adapted from The New Moosewood Cookbook by Mollie Katzen.

NOTE: Dried beans (2 1/2 cups) may be used. Soak the beans overnight, then place the soaked beans in a Dutch oven or large soup pot and cover with water. Bring to a boil. Partially cover, turn heat down to a simmer and cook until tender, about 1 1/4 hours. Watch the water level during cooking, adding more if necessary. Drain off any excess water when the beans are done.

Use kidney beans or any combination of beans you prefer to make this wonderful meatless chili!

This recipe is for Old Fashioned Peanut Butter Cookies but updated by the use of coconut oil instead of shortening. Coconut oil works just as well as shortening in this recipe and I’d encourage you to try it!
