This is a wonderful waffle recipe! To add more flavor, sprinkle nuts or berries across the batter before closing the lid on the waffle iron. This recipe can also be made with buttermilk by using 2 cups buttermilk, decreasing the baking powder to 1 tablespoon and adding 1 teaspoon baking soda.
Start heating waffle iron per manufacturer's directions. Sift flour, baking powder and salt together.
Combine milk, egg yolks and oil (or melted butter) and add to the flour mixture.
Beat egg whites until stiff peaks form; fold egg whites into batter.
When waffle iron is ready, pour batter into center of lower half until it spreads about 1" from edges. Bring cover down gently.
Cook per manufacturer's directions. Do not raise cover during baking. When waffle is done, lift cover; loosen waffle with a fork and serve at once.
