My mother made this peach cobbler every summer, and now I’m continuing the tradition! This cobbler has a biscuit-type crust. Delicious hot out of the oven with ice cream!
Place peaches, 1 cup sugar and cornstarch in a pan and cook together until mixture thickens.
Pour into a greased baking dish and dot with butter. Sprinkle with cinnamon and nutmeg.
To make topping, put the flour, 1 Tbsp. sugar, baking powder and salt in a mixing bowl. Cut shortening into dry ingredients. Stir in enough milk to make a soft dough. Knead slightly on floured surface. Pat or roll out to fit top of baking dish.
Bake at 400 degrees F. for 20 minutes or until top is nicely browned.
Serve hot with ice cream, if desired.
