This grilled chicken dish is fragrant with spices and many flavor intensifiers.  Flavor intensifiers include soy sauce, garlic, fresh ginger, coriander, turmeric, cayenne and honey.  The sauce is flavorful with peanut butter, soy sauce, lemon, brown sugar and cayenne.  The chicken is allowed to marinate for 1-2 hours before cooking so this dish is loaded with flavor.

  • 1.5 Pounds
    Chicken Fingers
  • 6 Tablespoons
    Soy Sauce
  • 2
    Garlic cloves, chopped
  • 1 Tablespoon
    Ginger, fresh, grated
  • 1 Tablespoon
  • 1/4 Teaspoon
  • 1/4 Teaspoon
    Cayenne Pepper
  • 1 Tablespoon
  • 4 Tablespoons
    Soy Sauce
  • 4 Tablespoons
    Peanut Butter
  • 1/2
    Lemon, juiced
  • 1 Tablespoon
    Brown Sugar
  • 1/4-1/2 Teaspoon
    Cayenne Pepper
  • 1-2 Tablespoon
    Olive oil

  1. Combine chicken pieces, 6 Tbsp. soy sauce, garlic, ginger, coriander, turmeric, 1/4 tsp. cayenne pepper and honey in a plastic storage bag. Close top of bag and turn bag a few times to ensure chicken is all coated with the marinade. Allow to marinate in the refrigerator 1-2 hours.

  2. Add 1-2 tablespoons olive oil to stovetop grill pan and add chicken pieces to the grill pan. Grill on each side until done. (Chicken can also be broiled in the oven for 12-15 minutes or until done.)

  3. Prepare Peanut Sauce in which to dip Chicken Fingers. Combine 4 Tbsp. soy sauce, peanut butter, lemon juice, brown sugar and 1/4-1/2 tsp. cayenne pepper; stir together well.

  4. Serve Grilled Chicken Fingers with Rice and Peanut Sauce.
