Gluten-Free Coconut Flour makes a light and delicious pancake.  This recipe is easy to prepare as all ingredients are placed in a blender and blended until well mixed.  Pour the pancakes from the blender to the grill – what could be simpler?

Note:  This recipe yields 4-5 Coconut Pancakes.  If you’re cooking for more than 2, you may wish to double or triple the recipe.


Ingredients

  • 3 Tablespoons
    Coconut Flour
  • 3 Tablespoons
    Coconut Milk
  • 3 Tablespoons
    Coconut Oil, melted
  • 3
    Eggs
  • 1/2 Teaspoon
    Sea Salt
  • 1/4 Teaspoon
    Baking Powder
  • 2-3 Drops
    Liquid Stevia

Instructions

  1. Place all ingredients for Coconut Pancakes in a blender and mix until well combined.

  2. Pour Coconut Pancakes batter from blender to griddle or skillet. Cook over medium low heat until nicely browned on both sides. Serve with butter, syrup and/or other desired toppings.
