Dulce de Leche is readily available at Walmart and other retail stores. This recipe is from Nestlé and uses their brand of dulce de leche which is called La Lechera. If you like caramel, you will love this cheesecake! Also, this recipe is a “no-bake” cheesecake which is an added bonus in the warmer months.
Mix gelatin and hot water in small bowl until gelatin is dissolved; set aside.
Beat whipped cream and sugar together until soft peaks form. Set aside.
Beat cream cheese and dulce de leche in a large mixing bowl until creamy. Stir in gelatin mixture and vanilla extract. Fold in whipped cream.
Pour into a graham cracker crust. Refrigerate for at least 3 hours or until set. Serving suggestion: drizzle chocolate syrup over slice of cheesecake.
