Eating Coconut Almond Chicken is almost like taking a trip to the tropics! Flavors abound in the coconut, almonds and curry powder. This is an easy to prepare dish with only 5 ingredients.

Preheat oven to 350 degrees F. Grease a 9" x 13" baking dish with 2 Tablespoons coconut oil. Combine coconut, almonds, curry powder, salt & pepper (to taste) in a bowl and mix well.
Dip chicken in melted coconut oil, then in coconut-almond mixture.
Drizzle remaining coconut oil and coconut-almond mixture over the top of the chicken.
Bake for 45 minutes or until internal temperature reaches 160 degrees F.
