This muffin is light and fluffy, almost like a biscuit. Add other herbs or spices as desired to this wonderfully savory muffin!
Preheat oven to 425 degrees F. Grease muffin tin.
Combine all dry ingredients in a bowl.
Add egg to milk and stir. Pour melted butter into egg & milk mixture slowly, whisking mixture as butter is poured in (to prevent scrambling of egg with hot butter).
Pour wet ingredients into dry ingredients and stir until dry ingredients are just moistened. Stir in grated cheese.
Fill muffin cups 3/4 full and bake muffins until golden, about 20 minutes.
