A veggie burger made from pinto beans and walnuts flavored with lime juice and zest as well as cumin and cayenne.  Lime mayonnaise heightens the flavor of these delicious burgers!

Note:  Burgers need to be chilled for 10 minutes before cooking so plan your time accordingly.


Ingredients

  • 1/2 Cup
    Onion, chopped & divided
  • 1 Tablespoon
    Olive Oil
  • 1/2 Cup
    Bulgur
  • 1 Cup
    Water
  • 1 (15.5 oz.) can
    Pinto Beans, rinsed & drained
  • 1 1/2 Tablespoon
    Soy Sauce
  • 3/4 Cups
    Walnuts
  • 2 cloves
    Garlic, minced
  • 1/2 Cup
    Parsley (or cilantro)
  • 3/4 Teaspoons
    Cumin
  • 1/4 Teaspoon
    Cayenne
  • 1/4 Cup
    Mayonnaise
  • 1/4 Teaspoon
    Lime Zest
  • 1/2 Teaspoon
    Lime Juice

Instructions

  1. Cook 1/2 of the onion (3/4 cup) with 1/4 teaspoon salt in oil in a small heavy saucepan over medium heat, stirring occasionally, until golden, 5-7 minutes.

  2. Add bulgur and water and cook, covered, over low heat until water is absorbed, 15-18 minutes.

  3. Transfer to a bowl and stir in beans and soy sauce.

  4. Pulse bulgur mixture, walnuts, garlic, parsley, cumin, cayenne, a rounded 1/4 teaspoon salt, 1/2 teaspoon pepper and remaining onion in a food processor until finely chopped.

  5. Form rounded 1/2 cups of the mixture into 4 (3 1/2" diameter) patties.

  6. Chill at least 10 minutes.

  7. Brush patties all over with oil.

  8. Brush oil on grill pan and cook on each side until golden brown, about 8-10 minutes total. (May also be cooked on outside grill if desired).

  9. Mix together lime zest, lime juice and mayonnaise. Spread lime mayonnaise on bun or bread and add burger. Enjoy!
