This frittata recipe could be a complete meal in itself with eggs, cheese, bacon and potatoes, prepared easily by baking it in the oven.  Parmesan Frittata – an excellent entrée for breakfast or brunch!

Ingredients

  • 2 Tablespoons
    Butter
  • 6
    Eggs, beaten
  • 1 Cup
    Potatoes, chopped & cooked
  • 1/2 Cup
    Parmesan Cheese
  • 6 Slices
    Bacon, cooked crisp & crumbled
  • 1/4 Cup
    Green onion, sliced
  • 1/4 Cup
    Milk
  • 1/4 Teaspoon
    Black Pepper

Instructions

  1. Heat butter in a 10-inch oven-proof skillet, omelet pan or pyrex pie plate over low heat. (A cast-iron skillet works well.)

  2. Combine remaining ingredients; pour into skillet.

  3. Bake at 350 degrees F. for 20 minutes. Sprinkle with additional cheese, if desired.
