Fruit jellies or preserves are often melted down to make a glaze for a fruit tart or other dessert. In this recipe, peach preserves diluted with a few tablespoons of water is used as the glaze. This is a wonderful summertime dessert!
Spray pizza pan with pan spray for baking. Cut cookie dough into 1/8" slices. Using waxed paper seal cookie dough into a solid crust. Bake crust at 375 degrees F. for 12 minutes, then let cool.
Cream together cream cheese, sugar and vanilla. Spread mixture over crust, leaving the outer edge showing.
Using fruit of choice, arrange fruit over the crust. Pattern is your choice, often fruit is arranged in circles over the dough. Refrigerate.
Thin peach preserves with 2-3 tablespoons water to desired consistency for glazing. Brush glaze over fruit. Refrigerate.
