These meatballs are both tasty and appealing to the eye – make them smaller for cocktail meatballs!   

Note:  The last 3 ingredients are for the sauce to be poured over the meatballs prior to baking.


Ingredients

  • 1 Pound
    Ground Beef
  • 1 Cup
    Cooked Rice
  • 1/2 Cup
    Ketchup
  • 1
    Egg
  • 1/4 Cup
    Onion, minced
  • 1 Tablespoon
    Worcestershire sauce
  • 1 1/2 Teaspoon
    Salt
  • 1 (14-oz.) can
    Whole Cranberry Sauce
  • 1/3 Cup
    Brown Sugar
  • 1 Tablespoon
    Lemon Juice

Instructions

  1. For Cranberry Meatballs: Mix together ground beef, cooked rice, ketchup, egg, onion, Worcestershire sauce and salt. Form into walnut-sized meatballs. Place in a 13" x 9" x 2" baking dish.

  2. Combine whole cranberry sauce, brown sugar and lemon juice and pour mixture over the meatballs.

  3. Bake Cranberry Meatballs at 350 degrees F. for 30-40 minutes, until meat is done. Makes 24 meatballs.
