Scalloped Cabbage is a wonderful dish combining steamed cabbage with chopped green pepper, pimentos, bacon and Cheddar cheese covered in a white sauce with chopped onions and topped with buttered bread crumbs.
Note: Since Scalloped Cabbage is only baked for 10 minutes be sure to steam or cook the cabbage to the crispness or tenderness you like before adding to the baking dish.

Sweet Potato Pancakes are savory pancakes that can be served for breakfast, brunch, lunch or supper, depending on what other foods you’re serving it with! Grated sweet potatoes and onions are mixed with eggs, flour, orange juice and zest and spiced with cardamom. Serve with a dollop of sour cream and applesauce!

A basic recipe for Corn Pudding made from corn, eggs and half ‘n half primarily. More flavor may be added by adding chopped onions, chopped mild green chilies, and/or chopped pimentos to the mixture or by adding cooked crumbled bacon and/or grated cheese to top off the Corn Pudding after it’s baked. Cream or evaporated milk may be used in place of Half ‘n Half.
A wonderful chilled asparagus salad, marinated in oil, vinegar and soy sauce, and topped with toasted pecans.

This Sweet Potato Casserole is a holiday classic but it’s great any time of the year!
Note: 3 (15-oz.) cans of sweet potatoes may be used instead of 3 cups of fresh cooked sweet potatoes.
This slow-cooker version is so much better than the traditional green bean casserole recipe and it frees up the oven for other baking!
Note: 4 (15-ounce) cans of cut green beans may be used instead of the frozen green beans listed in the recipe if canned green beans are your preference.
