Scalloped Cabbage is a wonderful dish combining steamed cabbage with chopped green pepper, pimentos, bacon and Cheddar cheese covered in a white sauce with chopped onions and topped with buttered bread crumbs.

Note: Since Scalloped Cabbage is only baked for 10 minutes be sure to steam or cook the cabbage to the crispness or tenderness you like before adding to the baking dish.

Sweet Potato Pancakes are savory pancakes that can be served for breakfast, brunch, lunch or supper, depending on what other foods you’re serving it with! A basic recipe for Corn Pudding made from corn, eggs and half ‘n half primarily. More flavor may be added by adding chopped onions, chopped mild green chilies, and/or chopped pimentos to the mixture or by adding cooked crumbled bacon and/or grated cheese to top off the Corn Pudding after it’s baked. Cream or evaporated milk may be used in place of Half ‘n Half.
