Eating Coconut Almond Chicken is almost like taking a trip to the tropics!  Flavors abound in the coconut, almonds and curry powder.  This is an easy to prepare dish with only 5 ingredients.

Ingredients

  • 1/2 Cup
    Almonds, chopped
  • 1/2 Cup
    Coconut, shredded
  • 4
    Chicken Breasts, boneless & skinless
  • 1/3 Cup
    Coconut Oil, melted
  • 2 Tablespoons
    Coconut Oil, melted

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9" x 13" baking dish with 2 Tablespoons coconut oil. Combine coconut, almonds, curry powder, salt & pepper (to taste) in a bowl and mix well.

  2. Dip chicken in melted coconut oil, then in coconut-almond mixture.

  3. Drizzle remaining coconut oil and coconut-almond mixture over the top of the chicken.

  4. Bake for 45 minutes or until internal temperature reaches 160 degrees F.
