A basic muffin recipe to which bananas and cardamom are added for a unique and delicious flavor profile!
Note: If you don’t have buttermilk on hand, just mix 1 tablespoon vinegar into 1 cup regular milk to substitute.
Preheat oven to 425 degrees F. Grease muffin tins or spray with non-stick cooking spray.
In a bowl, cream butter and sugar.
Add the bananas, eggs, buttermilk and vanilla and mix well.
In another bowl, mix the salt, baking powder, cardamom and flour.
Add the flour to the bananas and mix until just combined. Don't overmix!
Fill muffin tins with Cardamom Banana Muffin batter. Bake at 425 degrees F. for 19 minutes.
