The lemon extract in this muffin recipe imparts a unique flavor to the blueberry muffins.  If you’re out of lemon extract, try substituting lemon juice instead.


Ingredients

  • 1 1/2 Cup
    All-Purpose Flour
  • 2/3 Cups
    Sugar
  • 2 Teaspoons
    Baking Powder
  • 1/2 Teaspoon
    Salt
  • 1
    Egg
  • 1/2 Cup
    Milk
  • 1/4 Cup
    Vegetable Oil
  • 1 Cup
    Blueberries
  • 1 Teaspoon
    Lemon Extract

Instructions

  1. Place all dry ingredients in a bowl; mix with a spoon.

  2. Add egg, milk, oil and lemon extract. Fold in blueberries.

  3. Fill greased muffin tin 2/3 full. Bake at 400 degrees F. for 16-18 minutes.

  4. After baking, spread butter on top of muffins, then sprinkle with sugar (optional).
