Cranberry Marshmallow Snack Cake contains cranberries, miniature marshmallows, brown sugar and chopped pecans in a basic coffee cake-type batter. The marshmallows melt into the batter making a somewhat crusty top to this cake.

For the holidays, cranberries can’t be surpassed in their ability to brighten any snack or meal with their sweet-tart goodness and their beautiful ruby-red color. In today’s post I’d like to share with you a snack cake that features the unique combination of cranberries with miniature marshmallows – Cranberry Marshmallow Snack Cake.

  1. 1/2 cup butter, softened
  2. 1 cup sugar
  3. 2 eggs
  4. 1 teaspoon vanilla extract
  5. 1 1/2 cups all-purpose flour
  6. 2 teaspoons baking powder
  7. 1/2 teaspoon salt
  8. 3/4 cup milk
  9. 1 1/2 cups cranberries, chopped
  1. 1 1/2 cups miniature marshmallows
  2. 1/2 cup brown sugar, packed
  3. 1/2 cup chopped pecans
  4. 2 tablespoons butter, melted
  1. In a mixing bowl, cream butter and sugar. Beat in eggs and vanilla.
  2. Combine flour, baking powder and salt; add to creamed mixture alternately with milk.
  3. Stir in cranberries.
  4. Pour into a greased 13" x 9" x 2" baking pan.
  5. Sprinkle with miniature marshmallows. Lightly press marshmallows into the batter.
  6. Sprinkle with brown sugar and pecans. Drizzle with melted butter.
  7. Bake at 350 degrees F. for 35-40 minutes or until cake tests done.
The batter for Cranberry Marshmallow Snack Cake is made by first creaming butter and sugar together, then adding eggs and vanilla, and alternately adding the flour mixture with the milk. Stir in the cranberries and pour the batter into a greased 13″ x 9″ x 2″ baking pan. Press the miniature marshmallows into the batter. Next, sprinkle with brown sugar and pecans and drizzle with melted butter. Following is a photo of Cranberry Marshmallow Snack Cake ready to go into the oven.

Then, during the baking process, the marshmallows melt into the batter, producing a slight crispness to the top. Cranberry Marshmallow Snack Cake is great with coffee, tea or milk! Enjoy it with your favorite fall beverage!
