Cottage Apple Walnut Pancakes are pancakes made with cottage cheese, apples and chopped walnuts flavored with cinnamon, lemon juice and honey. The batter will keep in the refrigerator for several days, making it easy to fix breakfast on any given morning! I enjoy recipes that can be made ahead, especially if you have company and desire to spend more time with them and less time in the kitchen!

My recent post Overnight Pumpkin Pecan Waffles received positive comments regarding the ability to make the batter ahead and refrigerate it until breakfast time. Making the batter ahead is a great time saver! Cottage Apple Walnut Pancakes are excellent for breakfast, brunch or any time you desire pancakes!


Cottage Apple Walnut Pancakes Recipe

Cottage Apple Walnut Pancakes
Serves 4
Pancakes made with cottage cheese, apple and walnuts, flavored with lemon juice, honey and cinnamon.

  1. 4 eggs, separated
  2. 1 cup cottage cheese
  3. 1 cup (packed) grated tart apples
  4. 3/4 cup flour
  5. 1 - 2 teaspoons lemon juice
  6. 1 tablespoon honey
  7. 1/2 teaspoon cinnamon
  8. 1/2 teaspoon salt
  9. 2 - 3 tablespoons finely chopped walnuts (optional)
  10. Oil or butter for frying
  11. Maple Syrup or Yogurt with Berry Sauce
  1. Beat the egg white until stiff.
  2. Combine all other ingredients (except toppings and frying oil) in a medium-sized bowl and mix well. Fold in the egg whites.
  3. Heat oil or melt butter in a skillet or griddle. When it is hot enough to sizzle a drop of butter on contact, pour batter (1/3 cup) and quickly smooth batter into a circle.
  4. Fry on both side until firm and light browned.
  5. Serve right away, topped with syrup, yogurt and/or berry sauce.

 An Apple A Day Keeps the Doctor Away!

In my recent post Pumpkin Apple Streusel Muffins I discussed some of the health benefits of apples. To briefly recap, studies have shown that apples provide some anti-cancer benefits for several different kinds of cancer. Apples may have some anti-asthma properties as well. Having a low glycemic index (GI), apples may improve blood sugar regulation by reducing glucose absorption and by stimulating the pancreas to secrete more insulin.


To make these pancakes lower in fat, low fat or skim milk may be used. All 4 egg whites are needed in the recipe but all 4 egg yolks are not essential – use only 1 or 2 egg yolks and these pancakes will still be great! Low fat cottage cheese may be used to further decrease the fat content of this recipe. The honey and the nuts may be omitted if you have a problem with either one of these ingredients.

I like Cottage Apple Walnut Pancakes with maple syrup but you may wish to serve them with sour cream or yogurt and a berry sauce.
