The Peabody Hotel

Back in the 1970’s, I was fortunate enough to stay at the Peabody Hotel several times. The Peabody Hotel in Memphis, Tennessee has a unique feature – their ducks! For 83 years now, the ducks have been visiting the hotel lobby fountain every day at 11 AM and then returning to their “Duck Palace” up on the roof every day at 5 PM. I thought it was delightful to see the ducks each time I went there, and apparently a lot of other people over the years have been enthralled with the ducks, too. What started out as a joke in 1933 became a custom that has pleased countless enthusiastic hotel guests. Vanilla Muffins

Peabody Hotel Vanilla Muffins are made from a batter that resembles cake batter more than the usual muffin batter. The method for making Vanilla Muffins varies somewhat from a traditional muffin in which wet ingredients are added to dry ingredients and mixed just until the dry ingredients have been moistened. In making Vanilla Muffins, the sugar and egg are beaten together in a mixer. Flour and baking powder are combined and added alternately with milk to the sugar-egg mixture. Melted butter and vanilla are added to the batter last. The vanilla extract is the “flavor intensifier” in this recipe.

The batter is portioned into muffin tins and baked for 20 minutes at 400°F.

Peabody Hotel Vanilla Muffins are light and have a fine crumb texture. These muffins would be wonderful with a fresh fruit salad or served at a brunch.

  1. 1 cup sugar
  2. 1 egg
  3. 2 cups all-purpose flour
  4. 2 teaspoons baking powder
  5. 1 cup milk
  6. 1/4 cup butter, melted
  7. 1 1/2 teaspoons vanilla extract
  1. Combine sugar and egg, beating well at medium speed of mixer.
  2. Combine flour and baking powder.
  3. Add to sugar mixture alternately with milk, beginning and ending with flour mixture, and beating well after each addition.
  4. Stir in melted butter and vanilla.
  5. Spoon into greased muffin pans, filling two-thirds full.
  6. Bake at 400 degrees F. for 20 minutes.
  7. Remove muffins from pan immediately. Place on rack to cool.
I hope if you’re ever in Memphis you get a chance to visit the Peabody Hotel and see their ducks! But in the meantime you can enjoy the Vanilla Muffins from the Peabody Hotel.
