Muffin Mania

Muffin mania is just a term that pretty much describes how I feel about muffins.  Muffins come in all shapes and sizes, can be sweet or savory and are so delicious!  A warm muffin slathered with butter or a cream cheese spread could easily be considered breakfast “comfort food.”

Nutty Apple Muffins

Today’s post features two muffin recipes that are very flavorful.  Nutty Apple Muffins are appropriately named for the nuts and coconut in this recipe. Vanilla extract and chopped apples add more layers of flavors to these wonderful muffins.  After baking, the tops of these muffins have a crispness that suggests cookies.  (My husband, AKA the cookie monster, really likes Nutty Apple Muffins, probably for just that reason!)


The dry ingredients include all-purpose flour, brown sugar, salt, baking soda, ground cinnamon and ground ginger.  Liquid ingredients are vegetable oil, eggs and vanilla.  Chopped apples, chopped nuts and coconut round out the list of ingredients for Nutty Apple Muffins.  

Liquid ingredients are added to the dry ingredients until the dry ingredients are just moistened.  Then the remaining ingredients are folded into the batter.  The batter is portioned into the muffin tins, which have been greased or to which paper liners have been added.  Spraying the paper liners with a mist of pan spray makes those paper liners easier to remove from the muffins after they are baked.

The muffins are baked for 25 minutes or until lightly browned.  This is a versatile recipe and is an excellent choice for serving to company or as part of a brunch menu.

Ingredients
  1. 3/4 cup vegetable oil
  2. 1 cup brown sugar
  3. 2 eggs
  4. 1 teaspoon vanilla extract
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon baking soda
  7. 1 teaspoon cinnamon
  8. 1/2 teaspoon ground ginger
  9. 1 cup chopped fresh apple
  10. 1/2 cup chopped nuts
  11. 1 cup shredded coconut
Instructions
  1. Combine all ingredients and mix well.
  2. Portion into muffin tins.
  3. Bake at 350 degree F. for 25 minutes or until lightly browned.
  4. Cool on wire rack. Serve warm.
Notes
  1. These wonderful muffins may be made ahead and frozen, if desired.

Cappuccino Muffins with Mocha Spread

Cappuccino Muffins with Mocha Spread

If you like coffee and chocolate you will really like Cappuccino Muffins served with a Mocha Spread.  Cinnamon, vanilla, coffee and chocolate impart their wonderful and unique flavors to Cappuccino Muffins.  While these muffins are baking in the oven, mix together the Mocha Spread.  The Mocha Spread mimics the ingredients of the muffins with coffee, chocolate and vanilla added to cream cheese.  Miniature semisweet chocolate chips are the perfect sized chips for the Mocha Spread.

Ingredients
  1. 2 cups all-purpose flour
  2. 3/4 cup sugar
  3. 2 1/2 teaspoons baking powder
  4. 1 teaspoon ground cinnamon
  5. 1/2 teaspoon salt
  6. 1 cup milk
  7. 2 tablespoons instant coffee granules
  8. 1/2 cup butter, melted
  9. 1 egg
  10. 1 teaspoon vanilla extract
  11. 3/4 cup miniature semisweet chocolate chips
Instructions
  1. In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt.
  2. In another bowl, combine milk and coffee granules until coffee is dissolved.
  3. Add the butter, egg and vanilla.
  4. Stir into dry ingredients until just moistened.
  5. Fold in chocolate chips.
  6. Fill greased or paper-lined muffin cups two-thirds full.
  7. Bake at 375 degrees F. for 17-20 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool for 5 minutes before removing from pans to wire racks.
  9. Serve warm with mocha spread.

Ingredients
  1. 8 ounces cream cheese, softened and cut into cubes
  2. 2 tablespoons sugar
  3. 1 teaspoon instant coffee granules
  4. 1 teaspoon vanilla extract
  5. 1/2 cup miniature semisweet chocolate chips
Instructions
  1. In a food processor, combine the spread ingredients.
  2. Cover and process until well blended.
  3. Transfer to a small bowl; cover and refrigerate until serving time.

Remember for the best results do not overmix muffin batter.  Combine the wet and dry ingredients until just combined, then fold in additional ingredients gently.
